Good Hakka noodles are about heat and timing rather than a long ingredient list. Our wok runs hot enough to give the noodles that faint charred edge — the wok hei that separates a real Hakka kitchen from a reheated takeout box — and everything is tossed for less than two minutes.

Hakka noodles are Indian-Chinese wok-tossed noodles, stir-fried at high heat with julienned vegetables, soy sauce and pepper. They are drier and smokier than saucy chow mein.
The vegetable version is cooked without meat. We also offer chicken, beef and shrimp Hakka noodles for anyone who wants protein in the same wok.
They are mild to medium as standard. Ask for schezwan-style noodles instead if you want serious heat, or ask us to keep the chilli out altogether for kids.
Our kitchen runs until 11:00 PM Sunday to Thursday and midnight on Friday and Saturday, so late-night noodle runs from Highland and Southcrest are no problem.
