Our veg momos are not an afterthought. Finely chopped cabbage, carrot, onion, garlic and fresh coriander are seasoned with Himalayan spices, folded by hand into a thin wrapper and steamed to order, then served with roasted tomato achar.
Vegetarian dumplings live or die on seasoning, because there is no fat from meat to carry the flavour. We salt the vegetables and drain them first so the filling stays juicy without going watery, then lean on garlic, ginger, coriander and toasted spice to give it depth.
